For the Toasted Kataifi Coating:

  • 3.5 oz (100g) kataifi pastry, thawed and roughly chopped
  • 3 tablespoons unsalted butter, melted

For the Pistachio Cream Cheese Filling:

  • 8 oz (226g) full-fat cream cheese, softened
  • 1/2 cup pistachio cream/paste
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup heavy cream

For Garnish:

  • 1/2 cup heavy cream, whipped to stiff peaks (for piping)
  • 1/4 cup chopped pistachios

Instructions

Prepare the Cake Layers: Bake two 8-inch round chocolate cake layers according to your recipe or box mix instructions. Let them cool completely on a wire rack. Once cool, level the tops with a serrated knife if needed.

Toast the Kataifi: In a skillet over medium heat, toss the chopped kataifi with the melted butter. Toast, stirring often, for 5-7 minutes until golden and crispy. Spread on a plate to cool completely.

Make the Pistachio Filling: In a large bowl, use an electric mixer to beat the softened cream cheese until smooth. Add the pistachio cream, powdered sugar, and vanilla. Beat until light, fluffy, and well combined.

Assemble the Cake: Place one cake layer on your cake stand. Spread about two-thirds of the pistachio filling evenly over the top. Place the second cake layer on top.

Coat the Sides: Use an offset spatula to apply the remaining one-third of the pistachio filling in a thin layer around the sides of the cake. This “glue” will hold the kataifi. Gently press the cooled, toasted kataifi all around the sides of the cake until fully coated.

Make the Ganache: Place the chocolate chips in a heatproof bowl. Heat the heavy cream in the microwave or on the stovetop until it just begins to simmer. Pour the hot cream over the chocolate chips and let it sit for 5 minutes without stirring. Then, whisk until the ganache is completely smooth and glossy.

Top the Cake: Let the ganache cool for about 10-15 minutes, until it’s slightly thickened but still pourable. Pour the ganache over the top of the cake, using the spatula to gently guide it to the edges.

Garnish and Chill: Refrigerate the cake for at least 1 hour to allow the ganache and filling to set. Before serving, pipe rosettes of whipped cream around the top edge and sprinkle with chopped pistachios.
